Gluten-Free Vegan Matcha Strawberry Cake
This GLUTEN-FREE VEGAN MATCHA STRAWBERRY CAKE is moist and fluffy and covered in a sweet and tangy 2-ingredient strawberry frosting.
Follow this recipe to make a delicious one.
🍴 RECIPE 🍴
*For the cake:
60 g of coconut oil
230 ml of unsweetened almond milk
2 tbsp of lemon juice *
8 tbsp of maple syrup
1 tsp of vanilla extract
150 g of ground almonds
150 g of gluten-free flour blend
2 heaped tsp of baking powder
¼ tsp of baking soda
1 ½ tsp of Zen Tea Leaf® Matcha Green Tea Powder
For the strawberry frosting:
400 g tin of full-fat coconut milk
2 tbsp of strawberry jam
*For the cake:
Preheat oven to 180 degrees Celsius.
In a large bowl, place the coconut oil & melt over a saucepan of boiling water. Then add the milk with the lemon juice, maple syrup, vanilla & ground almonds.
Sift in the flour, baking powder, bicarbonate of soda and matcha powder. Then mix well & transfer mixture between two small greased baking tins lined with baking paper. Bake for 15 minutes until risen. Once baked, transfer onto a wire rack to cool.
*For the strawberry frosting:
Refrigerate overnight the tin of coconut milk for the rich creamy. Open the tin upside down & pour off the watery liquid. Place the thick, creamy part into a bowl & add the strawberry jam.
Use an electric whisk to whip up the coconut cream until light and fluffy.
Once the sponges have cooled completely, place one sponge on a large plate or cake stand, and cover with half of the strawberry frosting.
Place other sponge on top and use remaining frosting to cover the top.
Decorate as desired.
Tastes best eaten on the day.
