Matcha Layered Cake

1 1/4 cup of cake flour
2.5 tbsp of Zen Tea Leaf® Matcha Green Tea Powder
6 large eggs
1 tsp of vanilla
3/4 cup of sugar
2 tsp of honey
1/3 cup of milk
4 1/2 tbsp of butter
2 cups of heavy cream
2 tsp of Zen Tea Leaf® Matcha Green Tea Powder
1/3 cup of sugar
Preheat oven to 350°F. In a small bowl, mix melted matcha powder. Then add & whisk milk. Set aside.
In another bowl, whisk eggs, vanilla, honey & sugar. Place the bowl over a pot of hot water; keep stirring until the temperature increases to 105F. Remove from the hot water & place the butter bowl from over the hot water.
In the meanwhile, whisk the eggs until pale in color. Sift the flour into the bowl & gently fold until well combined.
Remove the butter bowl from the hot water; add a little batter to the milk bowl & mix well. Slowly pour the milk mixture to the batter & gently fold until well combined.
Transfer the batter to an 8-in cake mold, and bake for 60~70 minutes.
Carefully remove the cake from the pan and cool it on a wire rack.
In a large bowl using a hand mixer, beat 1-cup heavy cream and sugar until soft peaks form.
To assemble the cake: Place the first cake on a serving tray and spread top with 1/2 cup whipped cream.
Follow the same process for the rest two layers.
To make decoration cream: in a large bowl, use a hand mixer to beat 1-cup heavy cream, sugar, and matcha powder until soft peaks form. Ice the cake fully with the matcha whipped cream, and decorate with fruits!
