Vegan Matcha Pistachio Chocolate Chip Cookies
Take a bite of a healthy VEGAN MATCHA PISTACHIO CHOCOLATE CHIP COOKIES and enjoy the benefits of Matcha!
Follow this recipe to make a delicious one.
🍴 RECIPE 🍴
2 tbsp of ground flax seed
1/4 cup + 2 tbsp of filtered water
1/2 cup of virgin coconut oil
1/2 cup of raw cashew butter
1 1/2 cups of xylitol (or coconut sugar, regular cane sugar)
1 tbsp of Zen Tea Leaf® Matcha Green Tea Powder
1 tsp of vanilla extract
1 tsp of baking soda
3/4 tsp of sea salt
3 cups of all purpose flour
3/4 cup of pistachios
3/4 cup of dark chocolate chips
Preheat oven to 350 °F.
In a small bowl, whisk in the flax seed & filtered water. Refrigerate for 15 mins.
In a large bowl, mix in coconut oil & cashew butter with sugar until well combined.
Add & mix in the vanilla extract & flax mixture until well combined.
Add in the matcha, baking soda & salt then the flour, a cup at a time.
Mix in the chocolate chips & pistachios.
Line 2 large baking sheets with parchment paper.
To Form the cookies take about a 1 1/2 inch chunk of dough, form into a ball and on prepared cookie sheets a couple inches apart, and press down just slightly. Bake for about 12-15 minutes, until puffed and just starting to brown slightly.
Remove from the oven & let it cool.
Repeat with remaining cookies.
