Warm Salmon Flake & Asparagus Salad with Matcha Vinaigrette
WARM SALMON FLAKE & ASPARAGUS SALAD WITH MATCHA VINAIGRETTE has a tender-crispy center that will satisfy your cravings!

INGREDIENTS:
1 bunch of asparagus
1 clove of garlic, crushed
2 tbsp of olive oil
4 oz of pieces of wild-caught sock eye salmon, pat dry
salt & pepper, to taste
sesame seeds & soft-boiled egg for garnish (Optional)
*Matcha Vinaigrette
2 tbsp of olive oil
1 tsp of sesame oil
2 tbsp of rice wine vinegar
1 tbsp of honey
1 1/2 tsp of Zen Tea Leaf® Matcha Green Tea Powder
1/4 tsp of salt
Instructions:
1. In a large pan, heat 1 tbsp of oil & add in the asparagus & garlic until just tender. Add salt & pepper to finish. Set aside.
2. In a pan, add the other tbsp of oil until it shimmers. Salt and pepper the salmon, then cook a few minutes on each side until it is just cooked through. Time for cooking may vary depending on the thickness of the salmon. Then transfer to a plate.
3. To make the vinaigrette, place all ingredients in a mason jar & shake for a minute.
4. After the salmon has come to room temperature, flake the meat using 2 forks. Distribute the salmon evenly between the 2 plates, then pour the vinaigrette on each salad to finish.
5. Garnish with sesame seeds and a soft-boiled egg. (Optional)
6. SERVE and ENJOY!
