INGREDIENTS
3/4 cup of rolled oats
1/2 cup of gluten-free flour
32g of vanilla protein powder
1/4 cup of coconut sugar
2 tbsp of ground flax
1/4 cup of melted coconut oil
3 tbsp of maple syrup
2-4 tbsp of water
1 tsp of vanilla extract
1/4 tsp of baking powder
a pinch sea salt
 
*Filling
2 oz of cream cheese
32g of vanilla protein powder
1 1/2 tsp of Zen Tea Leaf® Matcha Green Tea Powder⁠
2 tbsp of maple syrup
1 tbsp of almond milk
1/4 cup of powdered Swerve or can be replaced with more protein powder
 

 
Instructions :
1. Preheat oven to 350 F and prepare a baking sheet with parchment paper.
 
2. In a mixer, stir together the oats, coconut sugar, flour, flax, baking powder and salt until combined.
 
3. Add and mix in the maple syrup, coconut oil and vanilla until combined.
 
4. Add in the water 1 tablespoon at a time while mixing until a dough forms. This should vary depending on the type of protein you use.
 
5. Separate the dough into 12 evenly sized balls. It helps if you wet your hands a bit before. Use your fingertips to press them flat. Bake for 13-15 minutes or until edges start to brown.
 
6. Once cooled, place all filling ingredients into a food processor and blend until smooth.
 
7. Lay each cookie on it's back so the bottom is facing up.
 
8. Spoon filling into the center of the bottom of each cookie.
 
9. Place the cookies in the freezer for 10 minutes.
