Lentil Grain Bowls with Matcha Dressing

INGREDIENTS:
Matcha dressing:
1 cup of plain yogurt
1 tbsp of fresh basil
2 tsp of Zen Tea Leaf® Matcha Green Tea Powder
2 tsp of grated lime
2 tbsp of lime juice
3 cloves of garlic
1 tsp of agave nectar
Salt and pepper
Water as needed
Lentil bowls:
1 pound of broccoli
1 tbsp of grapeseed oil
Salt and pepper
2 cups of cooked black lentils
1 ⅓ cups of cooked farro
Optional garnish:
Fresh basil
Sunflower seeds
Edible flowers
Instructions:
Preheat oven to 450 °F.
Prepare dressing:
Whisk yogurt, basil, matcha powder, lime peel, lime juice, garlic, agave nectar, and salt and pepper until well-combines.
If dressing is too thick, gradually stir in water until desired consistency is reached.
Set aside.
Prepare bowls:
Mix broccoli, grapeseed oil, and salt and pepper until combined.
Spread on baking sheet and place on center rack of the oven.
Cook for 20 mins, stir, and cook again for 10 more mins.
Divide cooked black lentils, farro &broccoli between bowls.
Drizzle with matcha dressing.
Garnish with basil, sunflower seeds, and edible flowers if desired.
