Matcha Blueberry Cheesecake

 

Super smooth and creamy matcha cheesecake with a sweet blueberry swirl. This easy cheesecake is baked in a gluten-free graham cracker crust with no water bath perfect for spring and summer.

INGREDIENTS
Matcha cheesecake
1 9-inch of gluten-free graham cracker
24 ounces of full-fat cream cheese
¾ cup + 2 tablespoons of granulated sugar
¾ cup of sour cream
1½ tsp of pure vanilla extract
¼ tsp of kosher salt
2 tbsp of Zen Tea Leaf® Matcha Green Tea Powder⁠
2 large eggs
 

Blueberry swirl
2 cups of fresh or frozen blueberries
2 tbsp of granulated sugar
1½ tbsp of fresh lemon juice
1 tbsp of water
1½ tsp of corn starch

 

 

Instructions:⁠
1. Preheat oven to 350°F. Bake & cool the gluten-free graham cracker.
2. In a saucepan, cook the blueberries, granulated sugar & lemon juice for 3-5 mins. Meanwhile, whisk the water & cornstarch in a bowl. Then, slowly pour the corn starch slurry into the blueberries, stirring as you until the syrup begins to thicken. Remove from heat & pour half into a blender, blend until smooth, set aside. Transfer the other half to a bowl & chill until ready to serve.
3. Beat the cream cheese & ¾ cup of granulated sugar until smooth & creamy. Add sour cream, vanilla & salt until combined.
4. Mix well the remaining 2 tbsp of sugar with the matcha powder, then add it to the filling until well-combined & add the eggs, one at a time.
5. Pour the filling into the cooled crust & swirl.
6. Prepare a steaming pan by boiling about 2-quarts of water. Place the cheesecake on the middle rack of the oven and pour the boiling water into the 9x13 pan on the bottom rack. Bake it for 50-60 minutes. After baking, let it cool for an hour & transfer it to the fridge for at least 6 hours.
