Matcha Custard Pie

Follow this recipe to make a delicious one.

1 1/4 cups of unbleached all purpose flour
1/2 tbsp of granulated sugar
1 tsp of kosher salt
1/2 cup of unsalted butter
4 tbsp of ice water
2/3 cups of granulated sugar
2 tbsp of corn starch
1/4 tsp of kosher salt
1 1/2 tbsp of Zen Tea Leaf® Matcha Green Tea Powder
6 tbsp of unsalted butter
2 large eggs
1 egg yolk
3/4 cup of evaporated milk
1/2 cup of heavy whipping cream
1 tsp of vanilla extract
In a large bowl, combine flour, salt, sugar & very cold butter.
Slowly add in the ice water while kneading. (Do not over-knead)
Form the dough into a flat circular disc and wrap tightly in plastic wrap. Then refrigerate for an hour.
Preheat oven to 400 °F.
Let pie dough rest for 5 minutes then start flattening the dough on a heavily floured surface with a rolling pin & roll it until it forms a circle.
Transfer to a pie pan, trim the edges & refrigerate for 10 mins.
Cover it with parchment paper & bake for 15 mins. Set aside.
Lower oven temp to 325 °F.
In a large bowl, mix in sugar, corn starch, salt & Matcha powder.
Add & mix in butter then whisk in eggs one at a time until nice and smooth.
Then add & whisk in evaporated milk, heavy cream & vanilla.
Pour filling into the baked pie crust & bake for 20 mins.
Lower oven temp to 300 °F & bake for another 40 mins. Let it cool.
Decorate with whipped cream or sprinkle with Matcha powder
