Matcha-Pistachio Crusted White Fish

INGREDIENTS:â
Cooking sprayâ
3 Tbsp of finely crushed pistachiosâ
2 tsp of Zen Tea LeafÂŽ Matcha Green Tea Powderâ
1 tsp of lemon zestâ
1 tsp of honeyâ
2 Tbsp of extra-virgin olive oilâ
2 Tbsp of panko Japenese bread crumbsâ
4 6-oz of skinless, boneless firm white fish filletsâ
1/2 tsp of kosher saltâ

Instructions:â
Preheat oven to 450°F.â
Spray rimmed baking sheet with cooking spray.â
Combine pistachios, matcha, lemon zest, honey, and 1 Tbsp. of the oil in small bowl; set aside.â
Brush fish fillets with remaining 1 Tbsp. oil; sprinkle with salt.â
Place fish on prepared baking sheet.â
Spoon matcha-pistachio mixture atop fish, dividing equally and pressing to adhere.â
Bake fish until just opaque in center, about 10 minutes, depending on thickness.â
