Matcha Strawberry Cheescake

Ingredients
*Base:
1 1/4 cup of biscuits
1/2 cup of melted butter
*Cheesecake:
1 cup of cashews (soaked overnight)
1 can of full fat coconut milk
2 tbsp of condensed coconut milk
1 tsp of vanilla
1 tsp of agar powder
2 tsp of Zen Tea Leaf® Matcha Green Tea Powder
Instructions:
If you forget you soak cashews overnight then leave them in boiling water for 15 minutes. For best results, we repeat this step twice.
Blend soaked cashews. It is important to get these very smooth. You can add a tablespoon of coconut oil if they do not become smooth. If the cashew mix is not smooth then your cheesecake will be bitty.
To make the base, break up the biscuit into fine crumbs. You can either put these in a ziplock bag and use a rolling pin. Or, alternatively add them into a blender.
Add the melted vegan butter into the biscuits and mix by hand until you have a thick solid mixture. If its too wet add more biscuits and if its not sticking together add a little more melted butter.
Press the mixture into your springform pan. We would recommend adding parchment paper to the pan. Ensure that the biscuit base covers the entire area (as you will be pouring a liquid on top) and also make sure it is even. Leave this aside in the freezer.
In a pan, heat coconut milk and condensed coconut milk and stir. Add the agar powder when the coconut milk is warm. Then once the coconut milk reaches boiling point, whisk the agar. Turn off the heat and continue to whisk for another minute.
In the blender, add the condensed coconut milk, vanilla, and coconut milk mixture from the pan. Blend the mixture well. Add the matcha powder.
Add the mixture to the tin into the base.
Leave the cheesecakes to set for 1 hour in the freezer.
Once the cheesecake feels firm remove from the freezer and take out of the tin. Leave to thaw for 10 minutes before eating.
Decorate using fruits.
