Sweet Matcha Mochi
This version of a SWEET MATCHA MOCHI is one of a kind that you'll love to have in every bite!
Follow this recipe to make a delicious one.

1 ½ cups of sweet rice flour
1 cup of sugar
½ tsp of baking powder
1 ½ tsp of Zen Tea Leaf® Matcha Green Tea Powder
1 cup of water
¾ cup of coconut milk
¾ tsp of vanilla extract
cornstarch (for dusting)
Preheat the oven to 275°.
Grease an 8-inch square glass pan.
In a medium bowl, whisk in together the rice flour, sugar, baking powder & matcha powder.
In a separate bowl, whisk in together the water, coconut milk and vanilla extract.
Pour the wet ingredients into the dry ingredients and whisk until smooth.
Pour the batter into the pan, cover tightly with foil and bake for 60 minutes.
Remove the foil, let it cool and then recover with foil and let it sit at room temperature overnight.
Turn the mochi onto a cutting board and cut small cubes with a sharp knife.
Coat all over with cornstarch.
