Vegan Matcha Black Sesame Cinnamon Rolls

*Vegan Matcha Bun Dough
¾ cup of warmed almond milk
1 Tbsp of Zen Tea Leaf® Matcha Green Tea Powder
2 ¼ tsp of active dried yeast 1 standard packet
½ cup of melted butter
½ cup of sugar
1 tsp of lemon juice
3 cups of all purpose flour
1 tsp of salt
*Black Sesame Filling
½ cup black sesame seeds
½ cup organic sugar
¼ cup cold butter
2 tsp vanilla extract
2 Tbsp almond milk
1 tsp matcha
1 tsp fresh lemon juice
1 cup organic powdered sugar
1. In a bowl, whisk matcha & the warmed almond milk. Then add in the active dried yeast and stir. Let it sit 10 mins.
2. In a mixing bowl, whisk sugar, lemon juice, & melted butter until combine. Slowly add in flour until a dough forms. Then knead it for 5 mins until stretchy and elastic.
3. Lightly spray a large bowl with oil, form the dough into a ball, and add to the bowl. Cover & let rise for 1 hour.
1. Blend your black sesame seeds & sugar. Add in the cold butter & vanilla. Pulse together until a thick paste forms. Set aside in the fridge.
1. Roll the dough then evenly spread the sesame filling.
2. Lightly flour it & seal it by pinching the edges.
3. Trim the ends & place into a cake pan & cover it with plastic wrap. Set aside for 1 hour before baking.
Preheat the Oven to 350F then bake the buns for 40 minutes. Remove it from the oven & let cool.
In a small bowl, whisk the matcha, almond milk & lemon juice until no clumps. Gradually add & whisk in the powdered sugar until smooth icing has formed.
Pour it over the cooled buns.
