Vegan Matcha Mint Chip Popsicles
Someone is asking for more popsicles! This VEGAN MATCHA MINT CHIO POPSICLES will burst your tastebuds with the flavors of green tea, fresh mint leaves, and dark chocolate all wrapped up in a creamy cashew coconut base that you'll love!

🍴 RECIPE 🍴
INGREDIENTS:
¾ cup of raw cashews (soaked in boiling water for 1 hour)
¾ cup of water
½ cup + 2 tbsp of organic granulated cane sugar
1 ½ - 2 cups of fresh mint leaves
1 can of full-fat coconut milk
1 tbsp of Zen Tea Leaf® Matcha Green Tea Powder
pinch of sea salt
1/8 – ¼ tsp of peppermint extract (optional)
¼ tsp of chlorella powder (optional)
½ cup of finely chopped bittersweet chocolate
Instructions:
Soak the cashews as directed.
In a saucepan, bring the sugar & water to a boil, stirring to dissolve.
Add the mint and stir until wilted. Then let it rest for 5 mins.
Strain & squeeze in the syrup into a heatproof container. Let it cool.
Drain the cashews & blend it.
Add in the mint syrup and blend until smooth.
Add in the coconut milk and blend until silky smooth.
Blend in the matcha, salt & peppermint extract and chlorella if using.
Divide half of the chopped chocolate into popsicle molds.
Pour in the popsicle mixture & refrigerate for 30 mins.
When the popsicles have a partially-frozen, stick a chopstick into the mold and stir the chocolate bits into the popsicle mixture.
Then add the popsicle sticks & freeze it until firm.
