For the Biscotti
1/2 cup of vegetable oil
3 large eggs
1 cup of granulated sugar
3 1/4 cups of all-purpose flour
1 tbsp of baking powder
For the Matcha Glaze
1 1/2 tsp of Zen Tea Leaf® Matcha Green Tea Powder
3 tbsp of hot water
2 tsp of corn syrup
1 3/4 cups of sifted powdered sugar
Preheat oven to 375 °F.
Line a 13x9" baking sheets with parchment paper.
In a bowl, whisk in the oil, eggs & sugar.
In a separate bowl, whisk in the flour, baking powder & salt.
Pour the flour mixture into the oil mixture & stir until just combined.
Pick up the dough & roll it into a ball & place it on the lined cookie sheet.
Bake for 30 mins until the dough is lightly browned & let it cool for 10 mins.
Slice the dough into ½ slices. & place it back on the cookie sheets.
Bake it for another 10 mins per side, until golden brown around the edges then set aside & let it cool.
In a bowl, whisk in the matcha powder & hot water until entirely combined.
Stir in the corn syrup, followed by the sifted powdered sugar.
Let it cool and thicken.
Drizzle the glaze over cooled biscotti, or dunk the cookies right into the glaze.
Let it stand for 15 mins to allow the glaze to harden.
