Matcha Mochi
We love matcha in just about everything. From gingerbread cookies to lattes and beyond. These MATCHA MOCHI are really soft and stretchy. It is very yummy and it's easy to make.
Follow this recipe to make a delicious one.

INGREDIENTS
80g of Glutinous Rice Flour
20g of Corn Starch
30g of Sugar
140g of Milk
10g of Cooking Oil
2 tbsp of Cooked Flour
2 tsp Zen Tea Leaf® Matcha Green Tea Powder
200g of Red Bean Paste
Instructions:
For the dough
1. Divide red bean paste into 10x20g each.
2. Cover with plastic wrap and set aside in the refrigerator.
3. In a bowl, add 80g of glutinous rice flour, 20g of corn starch, and 30g of sugar.
4. Mix well until fully combined. Slowly add the 140g of milk while mixing.
5. Add the 10g of cooking oil and mix well. Set aside
6. Grease the dish, wipe and pour in the mixture.
7. Steam over medium heat for 20 minutes or until it's cooked.
For the cooked flour
8. Add 2 tbsp of glutinous rice flour in a non stick pan.
9. Turn on low heat and stir fry until it becomes light. Slightly yellowish and doesn't taste raw. Set aside.
For the mochi
10. Take out the cooked mochi. It is firm and slightly yellowish.
11. Mix the dough with spatula while it's hot.
12. When the dough cools down slightly, transfer it on a pastry mat.
13. Knead the dough until the cooking oil is fully adsorbed.
14. Add 2 tsp of Zen Tea Leaf® Matcha Green Tea Powder.
15. Knead until the color is even and the dough is smooth.
16. Divide the matcha dough into 10 portions and shape it into a ball.
17. Dust with some cooked flour and flatten it.
18. Wrap in red bean paste and pinch to seal.
19. Dust with some cooked flour to prevent sticking and roll
