This healthy Matcha Mousse Raw Chocolate Easter Egg is perfect for your Easter!

🍴⁠ RECIPE 🍴⁠
INGREDIENTS
*Chocolate Egg Shell:
200g of cacao paste
200g of cacao butter
⅛ - ¼ cup of maple syrup
 
*Matcha Mousse:
100g of organic virgin coconut
¾ cup of cashe w/ almond milk
½ cup of cashews
¼ cup of coconut oil
25g of cacao butter
2-3 tbsp of maple syrup
1-2 tbsp of Zen Tea Leaf® Matcha Green Tea Powder⁠
1 tsp of vanilla extract
 
Matcha Chocolate Drip:
50g of cacao butter
2 tsp of coconut oil
1 tsp of maple syrup
1-2 tsp of Zen Tea Leaf® Matcha Green Tea Powder⁠

Instructions:⁠
*Start by making a chocolate shell:
Melt your cacao paste, cacao butter & sweetener in a bain marie, over a low heat. Then, leave to cool until it's slightly thicker. Slowly pour into a mould & placed it in the freezer. Over a bowl, turn the moulds upside down & pour all dripping chocolate. Save any excess chocolate.
 
*Matcha mousse:
Blend all ingredients & remove your egg moulds from the fridge. Pour your mousse into the shells until almost full. Then refrigerate for 3 hours.
 
Melt the excess chocolate & place it into a disposable piping bag. Twist the bag & leave until cooled but still pourable.
 
Remove moulds from the fridge & carefully pull away the outer edges. Then grab your piping bag & start piping around the outer rings of both eggs & quickly close them together with a firm push. Place the other side of the mould back on & put into the freezer for 5 minutes.
 
*Matcha Chocolate Dip:
Melt all of the ingredients, over a low heat. Then whisk in your matcha & leave to cool to room temperature.
 
Remove your egg from the freezer. Pour your matcha chocolate on to the top until you are satisfied.
