*For coating ramekins:
½ tbsp of unsalted butter
4 tsp of sugar
For the custard:
150 ml of milk
100 ml of heavy whipping cream
3 large yolks
2 tbsp of sugar
3 tbsp of all-purpose flour (plain flour)
1-2 tbsp of Zen Tea Leaf® Matcha Green Tea Powder
For the meringue:
3 large egg whites
4 tbsp of sugar
1 tbsp of confectioners’ sugar
Preheat oven to 400ºF.
Brush the ramekins with butter. Put 1 tsp sugar in each & dust the insides with sugar, chill in the refrigerator.
In a large bowl, beat the egg yolks & sugar together. Sift the flour into the egg mixture and mix well. Heat the milk & heavy cream in a saucepan until almost boiling. Slowly add hot milk mixture into the egg mixture and whisk until well-combined.
Pour the mixture back into the saucepan. Whisk over a medium-low heat for 3-4 minutes until thickened & smooth. KEEP WHISKING. When the custard has thickened, transfer to a bowl. Cover with plastic wrap & let it cool for 30 mins. Then sift Zen Tea Leaf® Matcha Green Tea Powder into the custard.
*For the meringue
Whisk the egg whites till bubbles start to form & slowly add sugar for about 3-4 minutes. Whisk ⅓ of the meringue into the custard & mix until homogenous. Carefully fold in the rest of the meringue using a rubber spatula. Do not over mix.
Divide the souffle mix into 4 ramekins & bake it for 12-15 minutes until well risen and slightly golden on top. Dust with powder sugar.
