Strawberry Matcha Cake

INGREDIENTS
*Matcha pastry cream
270g of whole milk
7g of Zen Tea Leaf® Matcha Green Tea Powder
2 egg yolks
35g of powdered sugar
20g of cornstarch
4g of gelatin
*Matcha diplomat cream
All matcha pastry cream
150g of very cold single cream
100g of cold mascarpone
*Genoise with lemon zest
2 whole eggs
60g of powdered sugar
Lemon zest
60g of flour
*The lemon soaking syrup for the sponge cake
90g of water
50g of lemon juice
60g of powdered sugar
+ 200g of fresh strawberries
Instructions:
*Matcha pastry cream
Rehydrate the gelatin in cold water.
Bring the milk to a simmer with matcha.
Whisk the egg yolks with sugar & cornstarch.
Pour the boiling milk over the mixture then to a saucepan & cook for 1 min.
Add the gelatin & pour the matcha cream into a container. Film it & put it in the fridge for 5 hours.
*Genoise with lemon zest
Beat the whole eggs with sugar & lemon zest for 10 mins.
Incorporate the flour & cook the sponge cake for 15 mins at 180°C
*Strawberry dressing with matcha
Cut the strawberries. Zest half a lime, mix & put it in the fridge.
Place & arrange the strawberry halves around the edges.
Cut the cooled sponge cake & place one in the center.
Make the diplomate cream: take the matcha pastry cream out of the fridge & whisk it.
Beat it with the mascarpone & gently fold it into the matcha pastry cream then put it in the circle.
Spread the strawberries & place the second sponge cake on top. Finally, cover everything with the rest of the diplomat cream, smoothing to the brim.
Chill for 6 hours.
*Matcha Strawberry Finishes/Decors
Roll out some marzipan to a thickness of about 3mm. Cut out an 18 cm circle and sprinkle the rim with matcha.
Then spread some marzipan.
Gently move the marzipan disc over the strawberry plant and decorate with glossy strawberries, a little topping and sugar paste flowers.
